This is quite a simple stuffing for chicken etc...
- Melt the butter and gently fry the onion until soft.
- Stir in the oatmeal, season and cook gently for 10 minutes.
Does this ever bring back memories. This is delicious though I eat it with guilt. I usually make it with vegetable oil or margerine instead just because I don't eat butter. It's very tasty. My Canadian husband thinks I'm very strange. For a nice slightly lighter twist, I sometimes add small chunks of apple an cook it along with the onions.
