So easy, and so nice on a hot summer day. Originally from Christie Brinkley's Outdoor Beauty Book.
- 1 cucumber, seeded &,chopped
- 1 cup yogurt
- 2 teaspoons fresh dill, chopped
- 2 green onions, chopped
- Toss everything in a blender.
- That's about it!
A nice soupy variation on Greek zaziki, but I personally like the original better. Would improve quite a bit with garlic added.
