- 236.59 ml all-purpose flour
- 236.59 ml whole wheat flour
- 177.44 ml packed brown sugar
- 5.54 ml baking soda
- 1 vanilla bean
- 2.46 ml salt
- 118.29 ml baking cocoa
- 1 egg (beaten)
- 236.59 ml unsweetened applesauce
- 29.58 ml melted butter
- 473.18 ml shredded zucchini
directions
- Preheat oven to 325°.
- Combine flour, sugar, cocoa powder, baking soda, and salt in a large bowl. Mix well.
- In a medium bowl, mix egg, vanilla, melted butter, apple sauce and zucchini. Add to the flour mixture and stir until just blended.
- Pour batter into a large 9x5 inch loaf pan.
- Bake at 325° for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes. Remove loaf from pan and let it cool before slicing.
