We were in the mood for stuffed cabbage rolls, not in the mood for all the work or the time it takes, so I whipped this up in a few minutes and my family devoured it. Hope you enjoy!
- 1 lb ground meat
- 1 small onion, chopped
- 1 tablespoon butter
- 1 1⁄2 teaspoons cajun seasoning
- 2 cups cooked rice
- 1 (10 ounce) can Rotel Tomatoes
- 1⁄2 cup water
- 2 cups cabbage

- In large skillet, saute onion with butter, when onions become clear add ground meat to skillet seasoning with cajun seasoning. When meat is browned stir in cooked rice, topped with cabbage, can of Rotel tomatoes and water. Cover and cook on medium low heat for 20 - 30 minutes, until cabbage is tender.
