Skillet Potatoes

"These can also be done in the oven."

• Serves: 4

ingredients

• 2 lbs potatoes
• 2 green peppers, chopped
• 1 red onion, chopped
• 1 1⁄4 ounces Lipton Onion Soup Mix
• 2 tablespoons olive oil

directions

1. Combine all ingredients except oil.
2. Heat oil in non-stick skillet.
3. Cook potato mixture in a covered skillet for 12 minutes.
4. Stir occasionally.
5. Remove cover and continue cooking for another 10 minutes or until potatoes are tender.
6. Alternatively.
7. Toss all ingredients in a 9*13 pan.
8. Bake in a 400* oven until tender, about 30 minutes.
9. Stir occasionally.
