  • Heat oil in a large skillet over medium heat. Coat the pork chops with flour and place in the hot skillet. Brown about 4 minutes on each side.
  • In a small bowl, mix the Parmesan cheese, salt, and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Cover chops with a layer of potato slices. Sprinkle with remaining Parmesan cheese mixture. Top with onion slices.
  • Pour beef broth and lemon juice over the layered pork chops. Cover skillet, and reduce heat. Simmer 40 minutes, until vegetables are tender and pork chops have reached an internal temperature of 160°F.

  1. Halved the recipe for the two of us. In step 3 I put my covered pan in the oven @ 325 for about 40 min, then removed cover for about 10 min. Chops stayed moist, potatoes browned, excellent presentation, very tasty, and easy to prepare. Will definitely make again. Thanks for posting.
     
  2. We really enjoyed this meal. I used white potatoes (local grocery was out of Yukon Gold), and added about 2 tsp of garlic powder to the seasonings. It turned out very flavorful, with very tender meat. I would reduce the cooking time slightly however, as the pork did become a little dry. I will definitely make this again.
     
  3. Good savory onion-smothered chops. Make sure to slice your taters thin so they cook all the way. The parm flavors are in the background, the dominant flavors are the onion & beef broth. Easy one skillet supper.
     
  4. This was " Most Excellent" recipe! My husband absolutely waved over this recipe. I added a little more oil and some garlic to the pan to flavor the oil some. I had misread the directions and put the parmesan cheese and seasonings in with the flour and floured the pork chops and than used enough of the remaining flour mixture to sprinkle over the pork chops, potatoes and onions. It gave a nice thick gravy. The pork chops were so nice and tender and the potatoes had a great flavor. I will be serving this recipe again in the future. Thanks so much for sharing the recipe! I wish I could give it more than a 5 star review. Its every bit worth a 10 star :)

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
