Have to say did not do this exactly to recipe - I used 2 cups cooked rice I had in the freezer (plenty for 3 of us), cooked up the vegies though I had to use canned champignons (cut in half) and mixed the toasted pecans in with the rice mix rather than using as a topping though did find the cajun spice a little overpowering so would cut that back to 1/2 teaspoon and at the most 3/4 teaspoon otherwise enjoyed, thank you Brookelynne, made for Ir Recommend tag game and recommended by Karen Elizabeth.
Very much enjoyed this easy and colourful recipe, I only recently found cajun seasoning in the shops and always welcome the chance to use it! Don't buy instant rice, so just used normal long-grain rice, no problem. Liked the toasted pecans :) Very nice, thank you Brooklynne, rice with added veggies, what a pleasure. Excellent dish! I used parboiled rice and a frozen mix of red, green and yellow bell peppers because that's what I had. Wonderful with the cajun seasoning and the toasted pecans, I'll make this again. Thanks for posting!

I cooked the rice in the microwave. Another time I'll try it with cooked long grain rice. I used one small onion and probably more mushroom. Love the flavor of the onion, bell pepper and mushroom. I don't often use cajun seasoning and it was great in this rice. Thanks Brookelynne26 :) Made for Holiday tag game
I really liked the addition of the veggies to the rice, and it was very easy to adjust to taste using the cajun seasoning. I omitted the salt (personal preference). Thanks for sharing!
