This ended up really.... salty, for me, and not altogether Polynesian. In the end, the only things I tasted were the saltiness of the soy sauce and a little of the ginger. I will admit some level of responsibility for this, as we did let the meat sit in the marinade for most of the day. Still, I would reeeeeally cut back on the amount of soy sauce used in this marinade. Not only does it make the meat really salty, but as a result of its saltiness, the marinade is almost impossible to turn into a sauce.
- 6 pieces sirloin steaks, ½ inch thick
- 1⁄4 cup lemon juice
- 1⁄2 cup soy sauce, mixed with
- 1⁄2 cup water
- 1⁄2 cup apple juice
- 1 clove garlic, crushed
- 1 large onion, sliced
- 1⁄4 cup finely chopped ginger or 1 teaspoon powdered ginger
- 1 teaspoon salt

- Marinade the steak, turning occasionally, in the soy sauce, lemon juice, apple juice, ginger, garlic and onion for about 2 hours or more.
- Remove the steaks, season with pepper and broil in oven.
- Baste the steak while broiling with the mixture of soy sauce, lemon and apple juice.
- NOTE: Steaks can be cooked on the grill too.
