  • Spray a microwave safe bowl with cooking spray.
  • In the bowl, mix the egg and sugar until well combined, add the milk or yogurt and blend well.
  • Mix in the ground flax seed, cinnamon, and baking powder until well combined.
  • Microwave for 1½ minutes.

  1. A promised, this is very filling and simple. I used vanilla yogurt instead of milk and I think that was a good choice. More sweetness would have been welcome, but that might just be me. Topping this with strawberries or bananas or something would probably be excellent.
