Love this fresh version of the waldorf salad you use cream cheese and orange juice instead of mayo. I got this one from my Mom over 18 years ago, not sure where she got it. My boys will even eat this one.
- 8 ounces cream cheese
- 2 tablespoons orange juice
- 1 tablespoon orange rind, grated
- 1 tablespoon granulated sugar
- 3 cups apples, chopped
- 1 cup celery, chopped
- 1⁄2 cup pecans, chopped
- Combine cream cheese, orange juice, orange rind, and sugar mix until well blended. Add apples, celery and pecans and mix lightly then chill.
We just did a Thanksgiving "taste test" with this recipe alongside a traditional waldorf salad recipe made with Miracle Whip. DeeMiddleton's "Simply Wonderful" recipe is the clear winner! Besides better flavor, the cream cheese dressing also helps the salad hold together on dinner plate. Outstanding!
You were my choice for Pick-A-Chef and I made this recipe today. I have never liked Waldorf Salad because of the mayo, but, I love this. The orange flavor with the cream cheese was really good.
