Ingredients Nutrition

  • 18 ounces Simply Potatoes Mashed Sweet Potatoes, cooked to package instructions
  • 2 cups water
  • 2 cups granulated sugar
  • 3 lemons, zested then juiced (save roughly 1 cup lemon juice)
  • 12 cup freshly chopped mint


  1. Combine water and sugar in a medium sauce pan over medium-high heat until mixture comes to a full boil, stirring occasionally.
  2. Remove from heat and let cool, at least 10 minutes.
  3. Place cooled sweet potatoes, sugar mixture, lemon juice, lemon zest, and chopped mint in blender on high and blend until smooth.
  4. Pour mixture into a pan and freeze until solid, roughly 3 hours.
  5. Remove from freezer and blend mixture again in blender.
  6. Return mixture to pan and freeze again until ready to serve.
  7. Garnish with fresh mint leaves.
