  • Heat a large skillet and coat with the olive oil.
  • Add the zucchini slices and season with salt and pepper.
  • Saute over medium heat, stirring occasionally.
  • Once the slices begin to soften, about 10-15 minutes, stir the butter in and taste to see if it needs more salt or pepper.
  • Then, once the zucchini reaches the perfect doneness for you (we like it cooked all the way through with this method), remove from the heat and stir in the dill, or whatever herb you like, and serve.
  • Enjoy!
