  • Blend or process sardines, eggs, butter, mayo, lemon and mustard until smooth Stir in celery and scallions and chill.

  1. Very good. I used smoked sardines, and I used probably only half the amount of butter, but this still turned out delicious.
     
  2. I used 2 tablespoons of plain low fat yogurt instead of the butter, and a couple of dashes of worcestershire sauce and hot sauce. It was terrific!
     
  3. I did not have anything for sandwiches this morning, and remembered this recipe. Whipped up in a few minutes. Very tasty, even without the scallions, which I just forgot. I also subbed celery leaves for the celery, which I rarely have on hand. This is a great recipe for last minute needs, as you are likely to have the ingredients on-hand.
     
  4. I am unsure about the eggs, but my family has been making this for years, and also uses it as a sandwich spread (think tuna salad)with the addition of celery salt and other spices. I always use Gulden's Spicy Mustard where dijon is called for, spread this on some pumpernickel wedges, OMG too die for. Strong flavored fish and strong bread. Thanks for posting this, gonna make it tonight, and see if I can remember any of the spices my father used to use.
