I'm so glad this was posted. I have used this recipe for several years and I cut it off the bag of Simply Potatoes. It is still taped inside my cabinet door, but now I can have it here in my cookbook.
This is the favorite potato casserole at my house, very flavorful and easy to make. I make mine the day before for holidays and bake right from the fridge when ready to cook.
I too have topped with some chopped green onions, and sometimes with some shredded cheese during the last few minutes in the oven.
Super tasty and soooo easy. I actually had the Southwest flavored potatoes on hand so I used shredded "taco" cheese (jack and cheddar blend with some taco seasoning), and crushed tortilla chips in lieu of the cornflakes. Everyone LOVED it. Mixed it up, put it in the fridge before hand, then took it out about 30 min before cooking, topped with the chip/butter mixture and baked! Thanks for posting!!!
Very very good. This is like the potatoes my mom used to make. I did use cream of mushroom soup and added some minced garlic (1 clove) and some green onions with the regular onions. Made for New Kids on the Block tag game.
Made these last night with some pork chops and green bean almondine. Delicious!!!! I did add garlic, salt,pepper and a can of green Chile peppers and some diced jalapeños. Topped with crushed corn chips.
Amazing!!!! I have now won food bake offs with friends & have people requesting me to bring this dish to every party! For a little extra kick, skip some shredded cheese & add some cream cheese, the best!
These are fabulous! Served with our Easter ham this year!<br/>I used green onions. We loved the corn flake crust on top!!
I love this casserole! So quick and easy to make; the ultimate comfort food! Great for breakfast, brunch, lunch, or supper. I used green onions, and added two bunches of them at that. (Love green onions!) Instead of pouring all the ingredients over top of the shredded potatoes, I mixed all the ingredients together and spread it into a greased pan (except for the cornflake and butter topping, of course). I also added about 1/8 t. onion powder, 1/8 t. garlic powder, 1/4 t. pepper, and 1/8 t. salt to give this casserole some extra depth of flavor. One of my favorite potato casseroles! (PS: You could also add some cooked; 1/4" chopped Jimmy Dean turkey sausage links into this casserole as a variation...oooh they're so good!)
