I had some extra veal I didn't know what to do with and figured I'd try making some jerky out of it. It was surprisingly good. I think I could have turned the oven off much sooner though, it was very brittle. A nice slight hint of BBQ flavour and it was great. I used calorie-free Walden Farms BBQ because I'm on a diet, but I'm sure another full flavour BBQ sauce would add much more flavour. Also, I eyeballed the BBQ sauce, I used enough to cover all the meat, so it might be more than 1/2 cup.
I'm looking forward to trying this with Teriyaki Sauce and other seasonings. I don't add salt as I'm trying to watch my sodium right now. I found the bbq sauce was just enough flavour.
Directions:

Marinate veal scallopini overnight in BBQ sauce.

Place on wire cooling racks and place in oven ( I put mine on baking sheets so it was easier to move around.

Turn on oven to lowest setting and cook until they are dehydrated but not brittle.
