Just a really simple recipe for egg salad. No fuss, nothing fancy, just yummy. Feel free to use more or less of any ingredient to suit your taste.
- 1 dozen egg, hard boiled
- 118.29 ml mayonnaise
- 9.85 ml Dijon mustard or 9.85 ml spicy brown mustard
- 29.58 ml dried chives
- 1.23 ml salt
- 1.23 ml pepper
- Peel and chop the eggs.
- Mix all ingredients together in a large bowl.
- Serve over greens, or as a sandwich.
Great egg salad! The dijon mustard adds a nice zip and really makes this great. Left out the chives, otherwise made as directed and really enjoyed - thanks for sharing the recipe! Made for the Best of 2011 event, recommended by catnip

I also used Dijon mustard and fresh chives from the garden. While I was weeding the garden I accidentally pulled out some green onions so I chopped them and added also. Very fast and easy to make and taste so good. Made for I recommend Red, White, And Blue tag game.
