This salsa is awesome! I put it on my mother's homemade chicken Enchiladas! Yummo! My next door neighboor gave me this recipe and I fell in love with hers and begged her for it and thought my friends on Recipezaar would love it as well. I originally forgot to put the garlic in there and soon realized that is the most important ingrediant!

This salsa made for a good "quick fix" for dipping tortilla chips and may also be very delightful on enchiladas as mentioned in the introduction. However, it cries out for several hours of resting in the fridge for the flavors to meld properly. There is great potential...I'd have never thought of using canned chopped tomatoes for salsa before.
