    5-Ingredient Fix Contest Entry. This is my go to soup on cold or rainy days. With the Simply Potatoes Diced Potatoes with onion on hand it is quick and easy and on the table in 30 minutes. My husband loves it and he is my inspiration to cook. We have been married for 5 1/2 years and every morning it seems like the first day of our lives. I love to cook for him.

    Ingredients:

    Directions:

      In 4 quart soup pot fry bacon strips on medium-hi until crispy. Remove bacon. Crumble bacon slices set aside. Reserve 2 tablespoons for garnish. Drain all bacon drippings out of pan except for 2 tablespoons. Stir potatoes into grease and sauté for 5 minutes until potatoes begin to brown. Stir constantly since you do not want the potatoes to become crispy. Pour Broccoli and Cheese soup and broth. Stir until ingredients are combined. Return to stove and cook on med-hi heat for 20 to 30 minutes until potatoes are very soft and soup has thickened. Add 2/3 cup of sour cream reserving 1/3 cup for garnish. Heat through about 5 minutes. To serve ladle 1 cup soup into bowl and garnish each with dollop of sour cream and bacon sprinkles.
