Simply Delicious Honey Spiced Carrots

Edited after RSC reviews to make this less sweet. Carrots are a tasty yet budget conscious vegetable. However, cardamom can be an expensive spice so I buy it in bulk at my Health Food Store. That way I can buy just what I need at a fraction of the price charged in the grocery store! Kids generally like baby carrots so why not cook them up as a tasty side dish and get them eating a vegetable with their meal! Remember, DO NOT give honey to children under one year of age! I like to saute the carrots as that brings out the sweetness of the carrots but steam them if you prefer. Hope you enjoy this creation!

Ingredients:

Servings: 4

• 1 lb baby carrot
• 1 tablespoon honey (originally 2 T)
• 1 tablespoon butter
• 1/2 teaspoon cinnamon
• 1/8 teaspoon ground cardamom
• 1/2 tablespoon cilantro, chopped (optional) or 1/2 tablespoon parsley (optional)
• salt and pepper, to taste

Directions:

1. Saute or steam carrots until they are cooked to your desired texture and transfer to serving bowl.
2. Meanwhile, melt butter and mix in the honey, cinnamon and cardamom. Drizzle mixture over warm carrots. Sprinkle with chopped parsley or cilantro, if desired.
3. Season with salt and pepper if desired. Enjoy.

I guess I'm just one of those who's soooo easily satisfied, at least when it comes to foods that I enjoy! Although I made this without the cilantro, the recipe was otherwise followed, & we thoroughly enjoyed this honey-sweet carrot dish! Thanks for sharing the recipe! Lovely combination of spices however I found it was a bit too sweet for my tastebuds. Looks great with the chopped cilantro - I chopped mine very fine.

This was just 'okay' for us. I found the cinnamon overpowered the cardamon. I didn't have it pre-ground, so I crushed the seeds from 2 pods, which gave me 1/8 tsp. Maybe it just wasn't enough. I used parsley in place of the cilantro, as I didn't have any. It was certainly easy enough, but nothing special.
