"Official Contest Entry: Simply Potatoes 5Fix. Ramps are a culinary tradition here in Appalachia. Often cooked with potatoes, this tasty vegetable is harvested for only a few weeks each spring. Ramps freeze well though, so they can be used all year long. This recipe features the traditional combination of potatoes and ramps with a twist -- instead of frying them up for breakfast, here's a hearty soup. Enjoy!"

  • Clean and chop ramps. Set aside.
  • Set heavy whipping cream out of refrigerator -- bring to room temperature.
  • Put 2 cans chicken broth into large (3 qt or larger) pot.
  • Bring to a boil.
  • Add Simply Potatoes Southwest Style Hash Browns. Stir.
  • Reduce heat to medium and cook about 20 minutes or until potatoes are tender, stirring occasionally.
  • Reduce heat to low.
  • Add ramps. Stir.
  • Add cheese and stir until cheese melts completely.
  • Add heavy whipping cream.
  • Stir over low heat for about 2 minutes.
  • (If thinner soup consistency is desired, pour in the additional can of broth and stir another 2 minutes.).
  • Enjoy!
