My friend Teri gave me this recipe a few years ago. It is simply chicken salad with no fancy ingredients but can be served so many ways. Try with croissants, puff pastry, to stuff avocado, tomato etc.
- Mix first 6 ingredients together in a large mixing bowl.
- Shred or chop cooked chicken.
- Add with remaining ingredients and toss with the dressing.
This was my first time making chicken salad and we loved this recipe. The sour cream gives it a great zip. I prefer pecans so I added those instead of almonds and I didn't have cream so I added one tablespoon of milk. My picky daughter even asked for seconds. We'll definitely be making this again for our next picnic.
