I'm not sure "simplified" is the right word for this recipe. I've cooked Melissa D'Arabian's (Food Network, $10 Dinners) "Weekday Cassoulet" about five times since that show first aired. Now that's "simplified" (http://www.foodnetwork.com/recipes/melissa-darabian/weekday-cassoulet-recipe/index.html). I do however like the addition of Lamb and Sausage in this "simplified" recipe, so next go 'round i'm going to combine the two recipes - using the simplification of canned beans (i tried beans from raw state twice and neither time did they come out better than canned) and not brining the chicken.
