This is not a traditional recipe, but my preference. You can use radish leaf or young mustard cress instead of watercress. I find it very satisfying as a breakfast, lunch or dinner.
- 2 slices bread
- 2 tablespoons cream-style cottage cheese (vegans can use mashed avocado, its delicious too)
- 4 slices tomatoes (sliced thin)
- watercress (washed dried and destalked)
- Spread cheese or avocado on both slices of bread. Layer one slice with tomato, season with salt and pepper. Top with watercress. Close with the other slice. Cut and Serve!
