A very, very delicious and simple soup. To make it even simpler, I used a tsp. of dried thyme and basil and used 6 cups of broth instead of 8. I made it for guests and served it with bread and a salad. Everyone loved it.

Good simple winter soup recipe. I substituted swiss chard for spinach, since I had it fresh from my farm share.

This was really good! I made two small changes - after halving the recipe, I used 1 tsp dried thyme instead of fresh, and half the amount of broth as I like a thicker soup. Perfect recipe for a quick dinner after work, served with fresh hot biscuits. I'll definitely make this one again. Thanks for sharing!

Super easy!
Very tasty Italian type of soup.
DH & I loved it!
I purchased a very high quality vegetable broth, which I believe helped with the rich taste.
One bowl I served with parmasean cheese & one without.
Was very good with or without the cheese.
The nice amount of basil and that quality broth gave it a nice distinct taste!
This soup was excellent by itself but you could add some tortellini toward the end of cooking or some other kind of cheese on top such as mozzarella. Was nice to have the crusty bread to sop the juice.
I will definately cook again!
