A favourite, simple quick dish. Best if made right before serving. You can try mixing a high quality Parmesan and provolone cheese. Do not use the shaker Parmesan, it won't have the same effect. If you can't afford the more expensive Parmesan, a white cheddar (not orange) or mozzerella will do the trick.
- 2 large tomatoes
- fresh basil, chopped
- 1⁄8 cup balsamic vinegar
- 1⁄4 cup parmigiano-reggiano cheese, grated
- Slice tomatoes.
- Arrange tomatoes on platter.
- Sprinkle with balsamic vinegar, basil and top with cheese.
- Serve (yes, it's that easy!).
