  1. I didn't use onions and used white balsamic vinegar, so the avocado retained a beautiful green. I also used avocado oil from Trader Joe's. This is DELICIOUS!!! I will probably add a little more vinegar and salt it a little more. Snipped up fresh cilantro on it and YUMMO. I am going to be making this a ton. Love avocados!!!
     
  2. Stick to the 1/4 c. of red onion. One of the times I made this, I just wanted to use up the rest of the onion...bad idea. 1/4 c. is the perfect amount. Other than that, I love this recipe. I've used it as a salsa for chips, a condiment on wraps, and eaten it straight as a salad. It's awesome and no-cook. It doesn't get much better than that!
     
  3. Wonderful! I made this in the morning before church so it sat through the service (marinating) until our potluck at noon. It looked lovely (the lemon juice, which I actually drizzled on separately, kept it from discoloring) and tasted very flavorful. I used a combination of red onion and green onion, as well as a crushed garlic clove. Needless to say, there were no leftovers.
     
  4. Love avocados and tomatoes. The cilantro suggestion was perfect. I used Champagne vinegar - it's so much softer of a flavor - doesn't overpower the avocados. A little trick I learned in a cooking-class: add the salt to the vinegar before bringing together with the oil - the salt will dissolve to impart an equal flavor throughout your dish. I also emulsified the vinegar & oil before bringing all together in a bowl, so the dressing wouldn't separate when all put together. Great dish!
     
  5. I mixed things up a bit. I used grape tomatoes instead of medium vine ripened tomatoes. I also added in chopped yellow pepper. This was SO good! The dressing was perfect! Thanks!

  4. Yes, this was so simple. But somehow it worked so well. I had to use lime juice instead of lemon, but I think it was great, and I used plenty of salt and pepper which brought the flavours out. Also scatered a little cilantro over the salad before serving.
