So easy, so delicious and a perfect, frugal use for day-old or stale bread. Makes enough stuffing for a 12-16 pound bird. Variations: Olives, 1 cup (green, stuffed or black) OR 1/2 pound mushrooms chopped up and sauteed in butter. From the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947
- 1 1⁄2 lbs loaf bread, dried
- 1⁄2-1 lb butter
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup onion, peeled and minced
- Remove crusts, but bread into 1" cubes and place in a large bowl.
- Cut butter into small cubes; toss together with bread cubes.
