Quick and good. Very simple, for those week night meals. It's a starch and veggie side.
- 8 ounces pasta, dry pappardelle
- 3 cups Baby Spinach
- 1⁄4 cup parmesan cheese, shredded
- 1 tablespoon butter
- salt & pepper
- Boil pappardelle according to package directions.
- Put spinach, parmesan and butter in a large bowl.
- Drain pasta, add to bowl.
- Toss to mix, coat and wilt spinach.
- Season with salt and pepper.
