(LFRV - in moderation & skip the salt)Very easy, tasty & good for you! No nuts or tofu. Enjoy this on raw crackers, dip for veggies, or use as a spread for lettuce wraps. Sometimes I will add some cayenne for a spicer version.
- 4 cups Baby Spinach
- 1 large avocado
- 1⁄2 lemon, juice of
- 1⁄2 teaspoon herb-seasoned salt or 1⁄2 teaspoon sea salt
- Blend all ingredients in food processor until smooth!
- Enjoy with whatever you can get your hands on!
Yummy, simple, healthy!! I served this to a group of health conscious family members along with other dips and (sorry), rice crackers to dip. This was raved over!! I liked it. I did have to add a squeeze more fresh lemon juice to get it all blended up and ours didn't get completely smooth (the baby spinach) but that was fine, in fact maybe we liked it more that way for a little texture.
