I had been searching for a good simple recipe for potato salad and I hit the jackpot on this one!!! I followed the recipe (just cut it down for smaller serving size) and omitted the onion and boy was it a huge success!
This is the way my Mother always made her potato salad and my sister and I have continued to do the same except we both add sour cream to the mayonnaise. Do so to your preference. Since my husband doesn't care for the pickles, I don't add them anymore. I also sprinkle just a bit of paprika on the top to give it a bit of color. People have asked me for my recipe and say its the best they've ever had, so I guess I'll keep doing it this way.
You can call this Southern but I need to tell you that it is also the recipe my mom followed and I've continued to make and eat it. South Dakota born and raised. Maybe southern does enter into it.
I have made this same recipe for years,,, but I boil my potatoes in their skin,, much, much easier to dice up,,, also, I believe the potatoes have a better flavor.
