Simple Sopa (Grandma's Easy Mexican Soup)

"This soup is easy to make and suprisingly tasty. I got this recipe from my grandmother, who uses the larger zucchini from her garden for soups. I like to eat it with crackers or bread."

directions

  • Peel and chop zucchini. Set Aside.
  • Cut pork into small chunks or strips. Put the chunks into a large pot over medium heat. Let them cook through, then reduce heat and add the chopped zucchini, and sprinkle generously with garlic powder. You may need water to add to the pot to keep the mixture from burning on the bottom.
  • Cover the pot and allow the ingredients to cook 20-30 minutes, stirring occasionally. It is ready to serve into bowls when liquid condenses and zucchini are soft.
  • Salt and Pepper to taste.

I'm 17 years old and I've just graduated highschool one year early. I enjoy cooking, gardening, reading, and making friends. I plan on going to college in a year on a scholarship, and in the meantime I'm learning better home skills, like how to cook better. :D
