Yum. Never even dawned on me to roast carrots. Husband asked if it was sweet potoato. I did them in my toaster oven on convection setting at 450. Very good.

I used regular carrots and it came out fantastic. Nicely charred on the outside and perfectly creamy inside. This dish has just become my go-to recipe for carrots. Thank you.

Easy as can be, but very good. The naturally sweet flavor of the carrots comes through after roasting. I had to roast mine about 10 minutes longer in order to get them to soften up, but that is most likely due to my oven's quirks. Thanks!
