Didn't want to use butter with my roast veggies last night, and also wanted to cut down on the oil so I came up with this...It tasted better than I expected. So I'm posting this so I won't forget how I made them!!

  1. Preheat oven to 375 degrees.
  2. Chop up potatoes. Put in microwave for 2 minutes while chopping rest of veggies.
  3. Place all veggies in bowl. Add oil, vinegar and garlic, and toss to coat.
  4. Spread out in roasting pan and cook for about an hour.

Thanks for the great recipe. Microwaving the potatoes made for more even cooking. My veggies went for about 40-45 min and were perfectly tender inside and crisped and browned on the edges.
