Simple Roast Veggies

"Didn't want to use butter with my roast veggies last night, and also wanted to cut down on the oil so I came up with this...It tasted better than I expected. So I'm posting this so I won't forget how I made them!!"

  • Preheat oven to 375 degrees.
  • Chop up potatoes. Put in microwave for 2 minutes while chopping rest of veggies.
  • Place all veggies in bowl. Add oil, vinegar and garlic, and toss to coat.
  • Spread out in roasting pan and cook for about an hour.

  1. Thanks for the great recipe. Microwaving the potatoes made for more even cooking. My veggies went for about 40-45 min and were perfectly tender inside and crisped and browned on the edges.

I live in gorgeous Vancouver! I work in the day while my boyfriend works at night so we hardly ever see each other. I usually try to create meals we can take to work for lunch/dinner. We both love to cook together so when we do see each other we create new meals together we then serve at parties! We have no kids, but do have a cat he found at work when it was a teeny kitten with burnt paws, and a chihuahua puppy no one wanted. (How can you say no to animals in need!)
