Simple Potato Salad

This recipe was inspired by the one I learned from a video game, lol! But it is so simply delicious. It is quick and easy to put together with few ingredients. Enjoy!

Although I did follow the ingredient list, using the unpeeled potato, but I did juggle amounts around a bit! I cut the mayo back to just 1/3 cup, used only 1/4 teaspoon of a salt substitute, & then used 1/4 teaspoon of lemon pepper in place of the regular pepper! And although that gave us slightly more than 3 servings, the salad itself was very tasty & a nice change from the usual potato salads! Thanks for posting the recipe!   1. Cook potatoes however you please. (I cube mine and steam them in a steaming basket over boiling water for about 15 minutes. I also leave the skin on, but you may peel them if you wish.).
  2. Cook carrots however you please until slightly tender. (I steam these as well).
  3. Place cooked cubed potatoes, cooked diced carrots, and diced cucumber in a bowl.
  4. Add mayonnaise, salt, black pepper, and lemon juice and stir until well incorporated.
  5. Chill, covered in refrigerator for at least 1 hour.
