This is a simple soup, a nice clear broth soup with almost negligible calories if made without noodles, and if they are added, a filling meal of its own. Mom used to make it, but I've modified it a bit over the years
- 2 cups chicken broth
- 2 cups water
- 8 ounces mushrooms
- 1⁄2 cup diced sweet onion (1/2 a medium onion)
- 1⁄2 cup small noodles (acini de pepe for ex) (optional)
- bring liquids to a boil.
- add vegetables, simmer for 1/2 to 1 hour.
- add noodles.
- cook 10-15 minutes (per noodle directions).
