My friend Matt showed me how to make this. It's great with my black beans and rice!
- 1⁄4 cup chunky salsa
- 1⁄4 cup ketchup
- 1⁄4 cup low-fat mayonnaise (I like Vegenaise) or 1⁄4 cup vegan mayonnaise (I like Vegenaise)
- 12 ounces romaine lettuce
- 1 chopped tomato
- 1 chopped avocado
- 1⁄2 cup of crushed tortilla chips
- Mix salsa, ketchup and mayo in small bowl until well blended. Toss with veggies in large salad bowl. Top with crushed chips.
Made this just for 2 of us & followed the recipe EXCEPT that I included the avocado on only one of the salads (not mine), but I did include a 1/2 cup of diced jicama in my salad! Will certainly make this salad again! [Recipenapped & made in the Vegetarian/Vegan Recipe Swap 23]
DELICIOUS! I found just the right dressing for tonight-sweet and spicy, and pink!!! Lots of flavor w/ just 3 ingredients and so easy. Thank you, Prose, for a great recipe! Made for the Think Pink Tag Game In Honor of Breast Cancer Awareness, October 2008.
