Just thought i would share this recipe for meringue that a friend gave me as it is simple and always turns out great - this does enough for two meringue pavlova bases.

- Whisk the egg whites until they are stiff and form peaks.
- Then whisk in 75% of the sugar, the vanilla and vinegar until mixed.
- Fold in the remaining sugar then cook on low heat - 100 degrees centigrade for 3 hours.
- Remove from oven and leave to cool then decorate as wished.
