This salsa is from Salsa Cooking, an amazing Mexican cookbook that has been a stable for me for years. This salsa is easy and contains few ingredients. It provides a fresh and wonderful flavour and pairs well with fish.
- 2 mangoes, peeled, pitted and diced
- 1⁄2 cup red onion, finely chopped
- 1⁄2 red bell pepper, finely chopped
- 2 jalapeno chilies, seeded and finely chopped
- 3 tablespoons lime juice
- Combine all ingredients and serve.

This salsa is definitely easy to make and very delicious. I love salsa with fajitas or just for dipping with a tortilla chip. I only made one change and that was to leave out the red bell pepper and substitute pineapple. I like mango, but only when mixed with other fruit so the pineapple is a nice contrast to it. Also, added some cilantro as I love it in salsa. Made for ZWT-8-Mexico/US SW.
