This salsa is from Salsa Cooking, an amazing Mexican cookbook that has been a stable for me for years. This salsa is easy and contains few ingredients. It provides a fresh and wonderful flavour and pairs well with fish.
- 2 mangoes, peeled, pitted and diced
- 1⁄2 cup red onion, finely chopped
- 1⁄2 red bell pepper, finely chopped
- 2 jalapeno chilies, seeded and finely chopped
- 3 tablespoons lime juice
