I don't like my rice pudding full of fruit or cream or nutmeg - I love to have this warm or cold with a big splodge of stewed apple on top.
- Put the three ingredients in a large ovenproof dish with a lid.
- Put in moderate oven (170c) for about 90 minutes stirring every 20-30 minutes.
- It shouldn't form a skin.
- Take it out when it still looks a bit too liquid - the rice will continue to absorb while it cools.
