This is a quick and tasty sandwich I like to make with left over baked chicken breast. I usually use grainy mustard, but it's good with honey mustard too. I also like this on walnut bread.
- 2 slice chicken breast from left over baked chicken
- 1 pear, cored and sliced
- 2-3 arugula leaves (rocket)
- 9.85 ml mayonnaise
- 4.92 ml grainy mustard
- 2 slice whole wheat bread
- Mix mayo and mustard and spread on bread.
- Layer chicken, pear and arugula on bread.
