  • Preheat oven to 350 and line a muffin pan with cupcake papers.
  • Mix all ingredients and spoon into papers 3/4 full.
  • Bake 12-18 min or until a toothpick comes out clean.

  2. Absolutely delicious! Light and tender! I managed to get only 18 muffins, but that's fine by me. I added some chocolate chips too. Much better than other pumpkin cake mix recipes I've tried. I think it's the egg that lightens it up.
     
  3. These are absolutely the best pumpkin muffins I've ever made! Moist & flavorful. Wicked easy. I made some plain, and some with both chocolate chips and chopped pecans. Both were great, but even though I'm a dedicated chocoholic, I think I actually preferred them plain. Hmm, that can't be right. Better make another batch to test it out... BTW, my DH and 2 friends loved them too!
     
  4. Call me naughty, but I added 1 cup chocolate chips to the batter. The result was delightful.

Tweaks

  1. I only had yellow cake mix so I used that, and I had pepitas (shelled pumpkin seeds). I toasted the pepitas in a frying pan with cinnamon sugar and an smidge of butter, then put them on top of the muffins and baked them. I made them for a party at work and lots of people wanted the recipe!
