This recipe is incredibly simple and actually healthy. Each muffin is only worth 1 (one) point on WeightWatchers. These go great with cream cheese frosting and is great for breakfast, snacks, and desserts.

  1. Preheat oven to 350 and line a muffin pan with cupcake papers.
  2. Mix all ingredients and spoon into papers 3/4 full.
  3. Bake 12-18 min or until a toothpick comes out clean.

Absolutely delicious! Light and tender! I managed to get only 18 muffins, but that's fine by me. I added some chocolate chips too. Much better than other pumpkin cake mix recipes I've tried. I think it's the egg that lightens it up.

These are absolutely the best pumpkin muffins I've ever made! Moist & flavorful. Wicked easy. I made some plain, and some with both chocolate chips and chopped pecans. Both were great, but even though I'm a dedicated chocoholic, I think I actually preferred them plain. Hmm, that can't be right. Better make another batch to test it out... BTW, my DH and 2 friends loved them too!

Call me naughty, but I added 1 cup chocolate chips to the batter. The result was delightful.
