Oh wow, what a fantastic potato dish. I made it for one -- for lunch today -- and it was perfect! I used one potato, 1/2 of a small onion, 1 tablespoon fresh basil, 1 clove of garlic, the juice of half a lemon and 1/4 of the other ingredients. This is so easy to make. Thanks so much for posting your experiment.
A really lovely way to serve up potatoes. by mistake the onions kind of crisped up a bit but the taste was great. definitely a keeper, thanks for posting this

Another quick fix from a very good chef. I have loved your recipes I have made for PAC. I have saved a lot and can't wait to try them. This was very quick and tasty, I love the brown crusty bits too, I used red rooster potatoes and lots of onion, as we love them. Mine could have been a bit crisper, but that was my fault as I didn't cool my potatoes enough but it still tasted great. Made for PAC Fall 09
This is great when you need dinner in a hurry, nice & tasty, I still prefer them done in the oven but this is good when you need something quick. Thanks!
Overall, very good. I followed the recipe as posted except I didn't have basil so I added some parsley in its place. I do think that the pepper could be reduced some. My whole family enjoyed these. Thanks for posting. Made for 1-2-3 Hit wonders.

I followed everything to a tee except for one thing. I used baked potatoes leftover from the night before. It turned out amazing. I will definitly use this recipe again using baked potatoes.
