Simple Curried Chicken

- 1 chicken (barbequed from the supermarket)
- 2 -4 teaspoons curry powder
- 400 ml coconut milk
- 1 cup frozen peas and corn
- 1 pinch salt, to taste
- 1 tablespoon olive oil
directions
- Take cooked barbeque chicken (from the supermarket is fine), remove skin and remove flesh from the bones.
- Cut the meat into bite size pieces.
- Heat oil in frying pan and once hot add the curry powder.
- Allow the heat to flavour up the curry powder before adding the chicken.
- Stir chicken around pan ensuring it is coated with the curry powder.
- Remove pan from the heat and add in coconut milk. Reduce heat so that the coconut milk doesn't separate (it shouldn't if you use a good quality milk and do not use coconut cream).
- Add frozen peas and corn and simmer for 10-15 minutes.
- Season with salt and more curry powder to taste and to get a nice yellow looking curry sauce.
- Serve on a bed of rice.
- Delicious and even better the next day for lunch.

My Mother taught be some basics of cooking as a teenager, saying that I needed to make sure that when I moved out of home, I could look after myself and not have to rely on anyone. I guess I have come a long way from steak and chips or steak and veg so I think she was successful in getting me started. I love searching for that recipe that I know is going to be a delight to eat and doing my best to replicate it. My wife says that I am my harshest critic, but how else can you learn to fine tune the recipe.
