Simple Crock-Pot Corn Chowder

• Cook Time: 10 hrs

Ingredients:

Servings: 6

• 1 (32 ounce) can whole kernel corn , drained
• 3 medium potatoes , diced
• 1 onion , chopped
• 2 cups vegetable broth
• 2 cups soymilk
• ¼ cup margarine

Directions:

1. Combine corn, potatoes, onion, and broth in slow cooker.
2. Cover. Cook on low 7 to 9 hours.
3. Puree in blender for a smooth, creamy soup, or puree half for a chunkier soup.
4. Return mixture to cooker and stir in soy milk and margarine.
5. Cook on high 1 hour more.

This recipe does as it says: a very simple, quick-to-make recipe. I added some herbs and spices to give it some pizazz. Some oregano and pressed garlic helped a lot.
