Simple Chocolate Pudding

"I needed a rich pudding to go over cupcakes for my friend's birthday. They needed to be more or less low-carb; preferably more than less. *grins*"

  • Slowly heat cream over medium-low heat. When it starts to warm, it will get a thinner consistency. Add guar gum, vanilla, and orange zest when it gets to room temperature. Mix and continue to heat. Do not let it boil and stir constantly.
  • Chop chocolate and put it into a bowl. When cream is steaming and just starting to simmer, remove from heat and pour over the chocolate. Let sit for half a minute to melt the chocolate and then stir.
  • Mix until all the chocolate is melted and you have a smooth consistency. Let cool. Cover with plastic wrap and refrigerate.

I am also making forays into Russian cooking. <br /> <br />I am on a low carbohydrate diet for various and sundry health reasons. It's a lot of fun tweaking recipes to be low carb enough for me to enjoy. I've become a much better cook because of it. <br /> <br />I love sewing, embroidery, cooking, baking, and dancing. I just got a full time job again so I am relearning how to fit my cooking in around a strict schedule.
