A healthy way to use some leftover chicken for a light lunch.
- 1⁄2 boneless skinless chicken breast
- 1⁄2 tomatoes
- 1⁄2 cucumber
- 1 cup lettuce (or mixed salad)
- 2 tablespoons fat-free vinaigrette-style dressing
- Slice tomatoes and cucumbers.
- Mix all ingrediants together and enjoy!
- Croutons are optional.
