Simple Chicken and Sausage Paella

"This is it, my first recipe. I've been making this "Paella" for years. It's my husband's favourite. It tastes so good, everyone is always surprised when they hear it was cooked in the Microwave. Adapted from The Canadian Living Cooking Collection Series."

  • Using a 12 cup microwaveable dish, combine chopped sausages, onions, green pepper and garlic. Microwave uncovered at a High setting for approximately 4 to 6 minutes or until vegetables are soft. Stir halfway.
  • Add long-grain rice, chopped tomatoes, chicken stock, turmeric and cayenne pepper. Stir and cover. Microwave at a High setting for approximately 8 to 10 minutes until boiling. Stir and cover. Microwave at a Medium setting for another 5 minutes.
  • Add chicken. Season with salt and pepper. Stir and cover. Microwave at a Medium setting for approximately 7 to 9 minutes or until the chicken is no longer pink inside and most of the liquid has been absorbed.
  • Let stand covered for another 5 minutes.
  • Serve with chopped green onions.

A very nice recipe, even though I toned down the 'spicy' factor considerably (health concerns)...Even so, if you like 'spicy', I'm certain you'll LOVE this one...Just one TIP for folks that post a 'microwave' recipe...PLEASE post the 'wattage' of the microwave you used, so that the rest of us can adjust the cooktimes of your recipe, so we won't overcook or undercook your 'creation'...Thank you for posting this recipe!
     
  2. Even better the next day. We made the whole thing on the stovetop, and added some semi cooked chicken and sausage half way through cooking and let it simmer for about an hour in total. We also used brown long grain rice and added a half cup extra of stock. Thanks for posting this easy, tasty recipe!
     
  3. This was very good. I added shrimp and substituted the italian sausage for spicy polish sausage by Hilshire. I also added crushed red pepper for spice.
     
  4. This recipe was a lifesaver! We are doing renovations in our kitchen and can't use the stove. Things have been a bit longer than planned and all frozen meals I prepared are gone. It it difficult to find a recipe for a meal that is all done in the microwave and that as a bonus is yummy too :) Thank you so much

  1. This was very good. I added shrimp and substituted the italian sausage for spicy polish sausage by Hilshire. I also added crushed red pepper for spice.
     
  2. I used this recipe without the sausages, and substituted red pepper for the green one, persian rice for long-grain rice, cumin for the cayenne, and I added sliced green olives. I had to slightly increase the amount of liquids and the cooking time, probably because of the different rice type. The result was flavourful and filling. It was very easy to make (after the first experimentation). Highly recommended for a quick, easy meal in one dish.
