Simple, Chewy Peanut Butter Raisin Granola Bars

"The kids will love these and they are so much better than the store bought junk! It's a fairly simple recipe and you can add whatever dried fruit you want to get a different flavor. And if you're having a chocolate craving, stir in 1/2 c chocolate chips!"

  • In a large bowl, combine cereal, oats and raisins (or other fruit). Set aside.
  • In a small pan, mix brown sugar and corn syrup. Heat and stir until boiling.
  • Remove brown sugar mixture from heat and stir in peanut butter and vanilla.
  • Pour brown sugar/peanut butter mixture over the cereal mixture and stir to mix well (until everything appears to be coated in the peanut butter mixture).
  • Spray a 9x13 inch glass baking dish with cooking spray and press the mixture firmly into it.
  • Cool and cut into 16 bars. Store in an airtight container.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. It is the most wonderful place to live as it's nestled in the Appalachian Mountains and along the beautiful Susquehanna River. I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born. The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
